Ingredients
Serves: 2
- 2 free range chicken breasts
- 70g plain flour
- Salt & pepper
- 10ml olive oil and 25g butter for frying
- 50g butter for cooking
- Lemon wedges for serving
To serve:
Mashed potato, sautéed spinach or steamed broccoli
Method
- Preheat oven to 200c.
- Mix the flour, salt and pepper in a shallow bowl.
- Evenly coat the chicken breasts in the flour.
- Melt the oil and butter in a large frying pan.
- Fry the chicken breasts over a high heat five minutes each side, this will give them a golden colour.
- Transfer to an ovenproof dish and dot evenly with the remaining butter.
- Cover with butter paper or foil and cook for 15 minutes.
- Remove the butter paper, turn the chicken and spoon over some of the melted butter.
- Cook for another 5-10 minutes until golden.
