Ingredients

Serves: 2

  • 2 free range chicken breasts
  • 70g plain flour
  • Salt & pepper
  • 10ml olive oil and 25g butter for frying
  • 50g butter for cooking
  • Lemon wedges for serving

To serve:

Mashed potato, sautéed spinach or steamed broccoli

Method

  1. Preheat oven to 200c.
  2. Mix the flour, salt and pepper in a shallow bowl.
  3. Evenly coat the chicken breasts in the flour.
  4. Melt the oil and butter in a large frying pan.
  5. Fry the chicken breasts over a high heat five minutes each side, this will give them a golden colour.
  6. Transfer to an ovenproof dish and dot evenly with the remaining butter.
  7. Cover with butter paper or foil and cook for 15 minutes.
  8. Remove the butter paper, turn the chicken and spoon over some of the melted butter.
  9. Cook for another 5-10 minutes until golden.
