This recipe is easy to make and brings together autumn flavours of the apples while we invite in the winter berries as a perfect marriage with a light sponge.
Ingredients
Serves: 8
- 220g butter softened
- 220g castor sugar
- 2 eggs
- 400g self-raising flour
- Drop vanilla essence
- Zest of a lemon
- 50ml milk
- 4 large apples ( 40g sugar, 20g butter)
- Pinch cinnamon
- 250g mixed berries (frozen bag is perfect)
Method
- Peel apples and slice thinly, add a sprinkle of sugar and knob of butter, cinnamon then soften apples on the heat in a small pot.
- Remove from heat and add mixed berries. Stir gently together and spread apples and fruit onto a dish/tray or tin.
- For the sponge: In a bowl soften the butter and beat with electric mixer until light and creamy then add the sugar and beat for a further two minutes.
- Add beaten eggs and vanilla essence and mix together until mixture is light and fluffy. Add the milk.
- Fold in the sieved flour or gently mix in using mixer on a low speed.
- Spread and marble the sponge mix in on top of the fruit. Transfer to the oven and bake for 30 - 35 minutes.
- Serve with lashings of warm custard or whipped cream.
